I’m not sure whether this applies to the rest of the world, but over here in the UK we can’t get enough curry. Whether it be meeting friends in a local Indian restaurant, picking up a takeaway, getting a home delivery or even reverting to ready made sauces and cooking it at home, the majority of us enjoy the colour, variety and spiciness of a curry.

You can pick up “mini pizzas” for parties pretty easily at most supermarkets these days but here’s a slightly different and more interesting alternative which can be made quickly and easily.

I dread having to chop onions as my eyes sting like crazy. I normally start chopping an hour before I need to cook them as I have to keep taking regular short breaks away from the kitchen to allow the tears to dissipate.
