Guacamole is one of my favorite things to eat and it is also a pretty healthy snack. I make a quick guacamole sometimes by simply mixing fresh salsa and avocado with a little salt. I also use organic tortilla chips which are very good and cost the same as regular ones if not a little cheaper. It's definitely one of my favorite snacks.

I was looking forward to my long 2012 Easter break. I'd been working incredibly long hours and, by mid Thursday afternoon, I couldn't wait to finish my working week and spend four days relaxing. But was it to be? Don't be daft; of course it wasn't!
