This recipe isn’t one for the novice cook, but if you’re a vegetarian and/or enjoy baking, this could be a recipe you may want to try out. This serves about four (depending on the size of your appetite!) so may be a nice idea for a supper party with a couple of friends, or maybe for serving up at a barbecue if you have vegetarian friends joining you.

Gingerbread has always appeared to me to be quite fiddly to make so I was relatively impressed when I came across this recipe. I keep most of the ingredients in my store cupboard but I tend not to have Muscovado sugar or black treacle, but both are readily available at the local supermarket and are cheap enough to add to my shopping trolley,

This casserole is quick and easy to prepare and, unlike most casseroles, it's cooked in a jiffy.

The recipe serves 6 people and is great for a hearty supper with friends when served with a lovely crusty, rustic bread. However, if you can't afford the pancetta then you can always substitute it for streaky bacon and, for vegetarians, you'll know that there are various tofu/quorn type substitutes for the sausage and pancetta/bacon.
