3 medium avocados, seeded, peeled and mashed
1/2 tsp coriander (optional)
3 tsp lemon juice
1 hard boiled egg (optional)
2 tsp olive oil
1/2 small green bell pepper (optional)
1/2 tsp salt 2 green onions
1/2 tsp pepper 2 dashes chili powder

1 )In a bowl, add avocados, lemon juice, olive oil, salt and pepper, coriander (if using). Using the Turbo Stick hand-held blender, blend all together.

2) In the blender bowl, chop the egg (if using), green pepper (if using), green onions and chili powder. Add the avocado mixture and mix well.

1 orange
1 cup sugar
1 cup red wine
1 cup water
1 cinnamon stick
8 Ripe Pears

1 Wash the orange and thinly pare away the rind with a potato peeler. Shred the rind finely and put into a deep, flame-proof casserole. Add the sugar, wine and water and heat gently, stirring until sugar dissolved. Add the cinnamon stick and boil for 2 minutes. Remove from the heat.

2 Peel the pears, leaving the stalks on, and stand them in the red wine syrup. Cover the dish with a large piece of foil, pushing the stalks through the foil to hold the pears upright.

1 cup milk
5 tbsp sugar
2 tbsp all-purpose flour
1/4 cup unsalted butter
4 eggs
1 1/2 cups shredded coconut
1 tbsp icing sugar

1 Beat 1/4 cup of the milk with 3 tablespoons of the sugar and the flour. Bring the remaining milk to a boil in a saucepan. Add 2 tablespoons of the boiling milk to the sugar mixture and beat in well with the Turbo Stick hand-held blender, then add to the milk in the pan, beating vigorously all the time. Simmer gently until thickened, then cover, remove from heat and leave to cool for IS minutes.

2 1/2 cups milk
1/2 vanilla bean
1 piece lemon rind
4 eggs
1/2 cup sugar

1 Put the milk, vanilla bean and lemon rind in a saucepan and bring to a boil. Remove from heat and lift out the vanilla bean and lemon rind.

2 In a bowl, with the Turbo Stick hand-held blender, beat eggs with half the sugar and gradually pour in the hot milk, stirring constantly.

3 Melt the remaining sugar in a saucepan over a moderate heat until golden brown.

4 Divide between 6 ramekins and tum them so the caramel coats the bottoms and sides.
