Quick, easy and cheap to make, these sausages are perfect if you’re holding a finger buffet for friends or family over Christmas.
I suspect, like me, there are a few people who are having friends round for a buffet style meal over Christmas. As I work full time and have my sister and her tribe over on Christmas Eve I’ve bought in several frozen buffet items but I always think it’s nice to make a few of my own.

What do you do when you have a glut of runner beans? I usually freeze and salt mine but here's a slightly more unusual way to use them before they go stringy, and if you don't grow your own, look out for special offers in your local supermarket.

This recipe is listed as a starter but I'd be happy to eat it as a light lunch meal or serve it up with extra salad vegetables and bread or possibly a baked potato (with lashings of butter of course!).

The recipe refers to tiger prawns but some of you may not consider this to be appropriate bearing in mind recent publicity regarding the over fishing in so many countries. I can't afford to buy the true tiger prawns so use slightly smaller king prawns or even use bog standard smaller varieties – basically whatever suits your budget or your ethical beliefs!
