Another pumpkin recipe which is quick and easy to prepare as well as being hot and spicy after a night out trick and treating on Halloween!

This recipe serves four and don’t panic if you haven’t got cracked coriander seeds or fresh coriander. In place of the cracked coriander seeds I used ground coriander which any good supermarket will have on the spice shelf and, in place of the fresh coriander, I chopped up a bit of fresh parsley.

Here’s an interesting salad recipe I came across. It’s very simple to make but isn’t your bog standard lettuce, tomato, cucumber type of salad.

This takes a few minutes to prepare and a few minutes to cook but looks impressive if you serve it up at a dinner party or alfresco meal (weather permitting). It makes a great main dish or it’s equally as good as a starter.

This casserole is quick and easy to prepare and, unlike most casseroles, it's cooked in a jiffy.

The recipe serves 6 people and is great for a hearty supper with friends when served with a lovely crusty, rustic bread. However, if you can't afford the pancetta then you can always substitute it for streaky bacon and, for vegetarians, you'll know that there are various tofu/quorn type substitutes for the sausage and pancetta/bacon.
