So, I went to Blimpie today for lunch. I had a coupon from the Sunday paper for a free regular sub with the purchase of one regular sub and a medium drink. Not a bad deal and I was in the mood for a sandwich; something quick, cool and tasty.


I'm originally from Philadelphia, so I'd much rather have a good hoagie from a mom and pop store, but we have to make do with what we have available, so I sometimes go to Subway. I hadn't been to Blimpie in a long, long time. (No particular reason, just hasn't been convenient.)

Having just picked apples from our very small orchard, it’s hard sometimes to find new and more unusual uses for the windfalls other than chutneys and apple pies – both with eaters and cookers – so I was impressed when I found this delicious recipe online.

It makes enough for a 6 person dinner party and would be wonderful with cream or ice cream.

Tuna salad sandwiches, ham and cheese sandwiches, egg salad sandwiches. Does this sound all too familiar and boring to you? Brown bagging it doesn`t have to be boring and adding a little zing to your brown-bag lunch does not have to cost a lot either.
