Things you'll need...
2 Eggs
1/2 cup Mushrooms.
1/4 Onion.
2 oz Black Forest Ham.
1 oz Cheddar
1 oz Jack.
3 slices Avocado
Sour Cream.
Crack two eggs in a bowl, add a little ½ & ½. Beat with a fork.
Shred the jack and cheddar cheese, chop the Black Forest Ham and onions. Slice the avocado and the mushrooms.
Saute the onions and mushrooms in olive oil. Add ham, toss, turn off heat and leave covered in pan while you prepare the eggs.
Heat up an 8” skillet or Omelette pan.
Melt butter over medium heat (do not brown) and add eggs.
Try to get almost all of the egg cooked on one side without browning the bottom. Do this by lifting up one side of the omelette with a heat resistant rubber spatula, allowing the egg to flow below the surface. Do this a couple of times. Now flip the Omelette over by giving the pan a quick forward and reverse jerk, with a tossing motion.
After the Omelette is flipped, quickly sprinkle a thin layer of cheese. Add ham, onions, avocado slices and a couple of dollops of sour cream.
As the cheese begins to melt, carefully start to slide half of the Omelette onto a plate. Using the skillet, fold the other half over itself.
Garnish with a little Parmesan cheese, salt and pepper to taste.
