Sounds weird but thought I might give this cocktail a whirl this Christmas. It’s rather alcoholic but beats a boring old mince pie any day!

Are you like me? You make loads of mince pies for Christmas but they don’t get eaten on Christmas Day, you reheat them for Boxing Day and they STILL don’t get eaten and after a couple of weeks, when they’re turning blue and furry, you eventually relent and let the wild birds have them. This year I think I’m definitely giving the mince pies a miss and going to indulge in one of these cocktails.

Mince Pies are great and they are a traditional British sweet pie that despite its name contains no meat. They are delicious and really easy to make. I am going to set the scene here. Christmas is coming and you are planning to have a few friends over for a Christmas party. You have most of the food sorted but you want to make something that your guests can enjoy with a coffee after the main meal. Mince pires are the perfect option.

A big slice of creamy homemade Coconut Cream Pie can complete an elegant or a country home cooked meal. This pie is baked in a single crust pie that is filled with thickened coconut pudding made from milk, eggs, flour, vanilla, butter and sugar. You can top the pie with meringue or whipped cream.
