When I make potato salad everyone remarks how good it is. I make it for barbecues, parties and dinners. Now I want to share with you how I make my Potato Salad.

3 Large Baking Potatoes
3 Eggs
1/2 Cup of Chopped Onion
1/2 Cup of Chopped Dill Pickles
1/2 Cup of Miracle Whip
1 Tsp. of Mustard
1/4 Tsp. of Salt
1/5 Tsp. of Pepper

Peel potatoes, combine peeled potatoes and eggs in a pot bring to a boil and turn down flame,cook until potatoes soften. Drain water from potatoes, remove eggs and immerse eggs in cold water for a couple of minutes and remove shells from eggs. Set potatoes and eggs aside.

Chop onion and dill pickles finely, combine chopped onions and pickles in a large bowl, with salt, and pepper. Add potatoes to onion and pickle mixture, along with 2 eggs, (chop/slice up)the 2 eggs before adding to potatoes, onion and pickle mixture. Now stir in Miracle Whip and the 1 tsp of mustard. Potato Salad should be fluffy like whipped potatoes that is the consistency you want. Slice remaining egg and use as garnish on top of salad. You can also use parsley, to add color to garnish.
