I have been making this chili for more than twenty years. I have revised this chili more times than I can count, but this is the one my family always asks for. I lived in Kentucky several years ago, about seventy miles from Cincinnati, Ohio, where they are famous for their Cincinnati style chili using cinnamon and cocoa powder along with various other spices. While this is not a Cincinnati style chili, I use just a touch of cinnamon and cocoa powder in the seasoning mix. Both of these ingredients are optional, but give it a try, I think you will like it.

It has only been recently that I have been making my chili with chicken. This is now my favorite way to make chili, and it is an easy chili recipe to make. I use leftover (planned) meat from a rotisserie chicken; that makes it economical, and since the meat is already cooked, it saves me a lot of time. If you prefer white chicken chili, just microwave or boil a few chicken breasts to use in the recipe. If you haven't tried chicken chili - give it a try - you will be surprised how delicious it is.
